Ingredients & Instructions
Here's what you'll need:
2 lbs ground turkey (we mixed 99% and 93%)
1 birds eye or Thai chilis or serrano peppers, deseeded and finely chopped
1 onion, finely diced
4 tsp ginger, grated or minced
4 tsp garlic, minced
4 tbsp fish sauce
1/2 cup brown sugar
Green onions, sliced, to taste
Sesame seeds, to taste
Here's what to do:
— Heat the cooking fat of your choice (we used coconut oil) in a large skillet over high heat, then add the onion, ginger, garlic and chilis and cook until onions begin to soften and become a little translucent.
— Turn your heat down to medium, add the ground turkey and cook until white all over, crumbling the meat as you go.
— Add the sugar and fish sauce. Mix to combine, then leave it to cook without touching or stirring until the turkey starts to caramelize – anywhere from 2-5 minutes. Then stir it and leave it again, undisturbed, until all sides caramelize. Repeat as-needed until all the juices cook out and the meat is nice and caramelized.
— Garnish with green onions and sesame seeds (or don’t, whatever).
Notes
— The chilis and peppers are there to offer some heat to balance the sweet. If you’re sensitive to spice, or are serving this to kiddos, keep your pepper count down to 1.
— This dish is highly customizable — so make it yours! Serve the meat over raw cucumbers, snap peas, carrots, and cabbage with rice or vermicelli noodles; or add it to big bibb lettuce with julienned veggies for a crunchy lettuce wrap. This meat is so versatile to any asian base!
