3 lb ground turkey (we used 93%, 99% was way too dry)
3/4 c italian breadcrumbs
3 large eggs, beaten
2 tsp minced garlic
2-3 tsp Worcestershire sauce
2 tsp Italian seasoning
2 tbsp tomato paste
Salt and pepper, to taste
Freshly ground black pepper
1/2 c ketchup
2 tbsp brown sugar
Freshly chopped parsley, for garnish
𝘏𝘦𝘳𝘦’𝘴 𝘸𝘩𝘢𝘵 𝘵𝘰 𝘥𝘰:
— Preheat oven to 350 degrees and spray a muffin tin or mini loaf pan with cooking spray.
— In a large bowl, mix ground turkey with breadcrumbs, eggs, and garlic. Add Worcestershire, Italian seasoning, and tomato paste and mix well. Season with salt and pepper. Divide mixture evenly between 12 muffin tins or mini loaves.
— In a separate bowl, whisk together ketchup and brown sugar. Brush half the ketchup mixture on top of the meatloaf.
— Baked until cooked through, about 25-35 minutes.
— Once cooked, remove from oven and brush remaining ketchup mixture on top.
— Scream “MA! THE MEATLOAF!” every time you take a bite. People will love it.

— Prepare 8 lunches by putting 1 and 1/2 meatloaves/muffins per container.
— This dish pairs real well with mashed potatoes (obviously), or roasted vegetables and keeps for 5-7 days in the fridge.
