Here's what you'll need:
3 lbs ground turkey (99%)
1 12-16oz bag of julienned carrots, finely chopped
2 1/4 cups Italian breadcrumbs
3 large eggs
7-8 cloves garlic, minced
1 small red onion, finely diced
1 1/2 teaspoon salt
1 teaspoon black pepper
1 1/2 teaspoon Italian seasoning
1 teaspoon onion powder
3/4 cup green onions, thinly sliced
2 tablespoons fresh chives, chopped
Here's what to do:
— Preheat your oven to 375 degrees
— Add all ingredients to a large mixing bowl and mix to combine — careful not to over-mix. If mixture feels too dry, add 1-2 tablespoons of broth or water at a time to moisten it up so they stick together better.
— Once combined, use a cookie scoop to scoop a portion into your hands and roll into meatballs.
— Place meatballs on a parchment paper-lined baking sheet and bake for 20-25 minutes, until golden on the outside and juicy in the center (or 160-165 degrees)
Notes
— While these meatballs are incredibly universal, we found they taste the best doused in some buffalo sauce and eaten with some crunchy seasonal raw veggies.
