Ingredients & Instructions
Here's what you'll need:
1/2 cup brown rice, cooked
1 cup canned black beans, drained and rinsed
12 oz grilled chicken breast, chopped
2 cups bell peppers, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 avocado, sliced
2 plum tomato, chopped and seeded
1 red onion, diced
1/4 cup fresh cilantro, chopped
1 tsp salt
1 tsp pepper
Juice from 1/2 a lime
To prepare:
— Prepare your brown rice according to its package; grill your chicken to your desired doneness.
— While your rice and chicken cook and cool, heat a skillet to medium-high heat and sauté peppers, onion, and garlic in olive oil until fragrant and translucent.
— Combine sautéed veggies with rice, black beans and grilled chicken in a bowl.
— Prepare your fresh pico: chop onion and tomato, add salt, pepper, and chopped cilantro. Squeeze lime and mix together to combine.
— Divide ingredients into 3 servings and top each bowl with 1/3 avocado. Enjoy!
Notes
— Make your bowls as spicy as you want by adding chopped jalapeño to your pico, or top with your favorite salsa.
